Description

Chicken Francaise is a tasty way to prepare one of our favorite foods, chicken. It is breaded and fried and then kept warm with a lemony sauce.


Ingredients

  • 8  Each Chicken Breasts -Thin & Boneless
  • 1
  • 3/4  Cup(s) All Purpose Flour
  • 2
  • 4  Each Whole Eggs
  • 3
  • 1/3  Cup(s) Heavy Cream
  • 4
  • 1/4  Cup(s) Parmesan Cheese - Grated
  • 5
  • 2  Tea Spoon(s) Dried Oregano
  • 6
  • 4  Table Spoon(s) Olive Oil
  • 7
  •  To Taste Kosher Salt
  • 8
  •  To Taste Black Pepper
  • 9
  • 3  Each Garlic Cloves - Chopped
  • 10
  • 1  Each Lemons-Juiced

  • 4  Ounce(s) Weight Unsalted Butter - Cold cut in small pieces

  • 4  Fluid ounce(s) Dry White Wine

Directions

    1. Take eggs and crack into medium size bowl
    2. Add cream, parmesan cheese and dried oregano to eggs and mix
    3. Measure flour onto flat platter
    4. Take chicken breast and layout on cutting board
    5. Season both sides of chicken breast
    6. Place large saute pan on stove over medium heat
    7. Add olive oil to pan
    8. Take chicken breast and dredge in flour and pat off any excess flour
    9. Take chicken breast and submerge into egg mixture
    10. Remove chicken from egg mixture and place directly into hot saute pan
    11. Do Not touch until lightly brown around edges
    12. Turn over chicken breast
    13. Once second side is brown remove from pan.
    14. Repeat this process until all chicken is brown. Place chicken in 250 degree oven until sauce is ready
    15. Lower heat on saute pan to low do not clean out
    16. Add chopped garlic to pan and let saute until slightly brown
    17. Deglaze pan with white wine and lemon juice
    18. Let cook for 3-5 minutes
    19. Turn off heat to pan and add butter swirling pan until completely melted
    20. Add salt and pepper to taste
    21. Remove chicken from oven
    22. Place sauce over chicken and enjoy
