Description
Chicken Marsala is a simple but delicious old Italian favorite. Chicken cutlets lightly coated in flour then sauteed and braised in a brown mushroom wine sauce.

Each Chicken Cutlets, pounded thin

Cup(s) Flour, seasoned with salt & pepper

Cup(s) Wild Mushrooms (porcini, cremini, shiitake)

Cup(s) Marsala Wine

Fluid ounce(s) Chicken Stock

Table Spoon(s) Butter

Directions
- Lightly dredge chicken in flour
- Heat olive oil in a saute pan
- Once oil is hot, add chicken and sear until golden brown on both sides, about 3 minutes each side
- Remove chicken from pan and place to the side
- Deglaze pan with marsala wine and let reduce by half
- Add mushrooms to pan and saute
- Mix butter in with mushrooms
- Place chicken back into pan
- Add chicken stock and let reduce
- Taste and season with salt and pepper if necessary
- Finish with demi, toss to incorporate
- Serve and enjoy!
