Description

Chicken Marsala is a simple but delicious old Italian favorite. Chicken cutlets lightly coated in flour then sauteed and braised in a brown mushroom wine sauce.


Ingredients

  • 2  Each Chicken Cutlets, pounded thin
  • 1
  • 1  Cup(s) Flour, seasoned with salt & pepper
  • 2
  • 1  Cup(s) Wild Mushrooms (porcini, cremini, shiitake)
  • 3
  • 1/2  Cup(s) Marsala Wine
  • 4
  • 6  Fluid ounce(s) Chicken Stock
  • 5
  • 2  Table Spoon(s) Butter
  • 6
  • 1/2  Cup(s) Demi Glace, optional (See Recipe on IdealChef.com)

Directions

    1. Lightly dredge chicken in flour
    2. Heat olive oil in a saute pan
    3. Once oil is hot, add chicken and sear until golden brown on both sides, about 3 minutes each side
    4. Remove chicken from pan and place to the side
    5. Deglaze pan with marsala wine and let reduce by half
    6. Add mushrooms to pan and saute
    7. Mix butter in with mushrooms
    8. Place chicken back into pan
    9. Add chicken stock and let reduce
    10. Taste and season with salt and pepper if necessary
    11. Finish with demi, toss to incorporate
    12. Serve and enjoy!
