Directions
- Season chicken with salt, pepper and olive oil
- Grill on both sides until done
- Rough chop the roasted tomatoes, dates and caramelized onions
- Saute in the butter and oil
- When cooked out, finish with garlic oil, salt and pepper
- Heat oil in separate pan, when hot add spinach
- Once spinach isĀ almost fully wilted add salt, pepper and garlic
- Place spinach on plate, put chicken on top then top with fruit and tomato chutney
