Description

Grilled Breast of Chicken topped with a Chutney of Dates, Roasted Tomatoes, and Caramelized Onions this all sitting a top of Sauteed Spinach with Cumin and Cinnamon.


Ingredients

  • 2  Each Chicken Breast Wing, bone in
  • 1
  • 1/3  Cup(s) Onions, caramelized
  • 2
  • 1/3  Cup(s) Tomatoes, roasted
  • 3
  • 1/3  Cup(s) Pitted Dates
  • 4
  • 2  Table Spoon(s) Olive Oil
  • 5
  • 2  Table Spoon(s) Butter
  • 6
  • 1  To Taste Salt and Pepper
  • 7
  • 1  Tea Spoon(s) Garlic Oil
  • 8
  • 1  Quart(s) Spinach, cleaned
  • 9
  • 2  Table Spoon(s) Olive Oil
  • 10
  • 1  Pinch Cumin
  • 11
  • 1  Pinch Cinnamon

  • 1  Each Garlic Clove, minced

Directions

    1. Season chicken with salt, pepper and olive oil
    2. Grill on both sides until done
    3. Rough chop the roasted tomatoes, dates and caramelized onions
    4. Saute in the butter and oil
    5. When cooked out, finish with garlic oil, salt and pepper
    6. Heat oil in separate pan, when hot add spinach
    7. Once spinach isĀ almost fully wilted add salt, pepper and garlic
    8. Place spinach on plate, put chicken on top then top with fruit and tomato chutney
