This Chicken Sausage video recipe shows you how to make homemade sausage using ground chicken, sauteed spinach and roasted red peppers.


  • 10  Pound(s) Ground Chicken, dark and white meat

  • 10  Ounce(s) Weight Fresh Spinach

  • 2  Table Spoon(s) Olive Oil or Butter
  • 3
  • 4  Ounce(s) Weight Roasted Red Peppers
  • 4
  • 2 1/4  Ounce(s) Weight Kosher Salt

  • ½  Table Spoon(s) Black Pepper, freshly ground

    1. Add olive oil to a hot saute pan
    2. Add spinach and toss to lightly saute
    3. Once spinach is wilted, remove from heat
    4. Chop up spinach and roasted red peppers
    5. Add spinach and red peppers to ground chicken
    6. Season with salt and pepper
    7. Combine together using your hands
    8. Push ground chicken through casing using a sausage press (see video)
    9. Seal casing ends
