Description

This Chicken Forestiere recipe is made with mushrooms, tomatoes, and a sauce of reduced wine and chicken stock. It is a deep, hearty chicken dish that can be serve with your favorite starch or over pasta.


Ingredients

  • 12  Ounce(s) Weight Chicken Breast, cut into 4 equal size pieces

  • 2  Table Spoon(s) Shallots, minced
  • 2
  • 1/4  Cup(s) Tomatoes, diced
  • 3
  • 6  Each Button Mushrooms, sliced
  • 4
  • 1/4  Cup(s) White Wine
  • 5
  • 1/3  Cup(s) Chicken Stock
  • 6
  • 1  As Needed Kosher Salt
  • 7
  • 1  As Needed Black Pepper
  • 8
  • 1  Table Spoon(s) Butter
  • 9
  • 1  Table Spoon(s) Parsley, chopped
  • 10
  • 2  Table Spoon(s) Olive Oil

Directions

    1. Season marinated chicken with salt and pepper
    2. Heat a saute pan with oil
    3. Allow pan to get hot and add chicken
    4. Sear on both sides until fully cooked
    5. Remove from pan and add shallots to pan
    6. When shallots are soft, add mushrooms and saute
    7. Season with salt and pepper
    8. Add white wine and allow to reduce until almost gone
    9. Add the chicken stock and let reduce to a sauce like consistency
    10. Finish with diced tomatoes, parsley and butter
    11. Taste and adjust with salt and pepper
    12. Reheat cooked chicken in the sauce and serve

    Chicken Marinade

    Ingredients

  • 1 Table Spoon(s) Olive oil
  • ½ Tea Spoon(s) Garlic, minced
  • ½ Tea Spoon(s) Chives, chopped
  • ½ Tea Spoon(s) Thyme, chopped
  • Directions

    1. Marinate chicken in ingredients for 30 minutes
