Description
To make chicken stock you take leftover chicken bones, vegetables and let them simmer on a stove top for several hours. Many cooks refer to chicken stock as the "Foundation of the Kitchen."

Each Chicken Carcasses, cut into small pieces

Directions
- Bring pot to stove and bring to a boil then simmer skimming top to remove fats
- Cook on stove for 4 - 6 hours
- Remove from heat and ladel stock into a strainer reserving all the liquids (stock)
- Place chicken bones into a stock pot
- Add the onions celery and carrots
- Discard the solids
- Pour water over ingredients just enough to cover
