Description

To make chicken stock you take leftover chicken bones, vegetables and let them simmer on a stove top for several hours. Many cooks refer to chicken stock as the "Foundation of the Kitchen."


Ingredients

  • 2  Each Chicken Carcasses, cut into small pieces
  • 1
  • 1  Cup(s) Onion, diced
  • 2
  • 1/2  Cup(s) Carrots, diced
  • 3
  • 1/2  Cup(s) Celery, diced
  • 4
  •  As Needed Water
  • 5
  • 3  Each Bay Leaf
  • 6
  • 8  Each Pepper corns
  • 7
  • 5  Each Cloves whole
  • 8
  • 3  Each Thyme, sprigs
  • 9

Directions

    1. Bring pot to stove and bring to a boil then simmer skimming top to remove fats
    2. Cook on stove for 4 - 6 hours
    3. Remove from heat and ladel stock into a strainer reserving all the liquids (stock)
    4. Place chicken bones into a stock pot
    5. Add the onions celery and carrots
    6. Discard the solids
    7. Pour water over ingredients just enough to cover
