Description

This is a refreshing salad of Cucumbers and Peppers seasoned with a melange of Asian ingredients. Great to serve as a side dish or add seafood for a complete meal.


Ingredients

  • 2  Each Seedless Cucumbers, cut into 1/4" half moons
  • 1
  • 1  Each Red Bell Pepper, sliced on the bias
  • 2
  • 2  Table Spoon(s) Sugar
  • 3
  • ½  Tea Spoon(s) Thai Chili Pepper, minced
  • 4
  • 3  Each Scallions, thinly sliced
  • 5
  • 1/4  Cup(s) Rice wine vinegar
  • 6
  • 1  Tea Spoon(s) Sesame oil
  • 7
  • 1  Tea Spoon(s) Soy Sauce
  • 8
  • 2  Tea Spoon(s) Sesame Seeds, white and black
  • 9

Directions

    1. Place all cut up vegetables in a mixing bowl
    2. Add the vinegar, soy, sesame oil and sesame seeds
    3. mix well
    4. Taste and adjust seasoning if needed
    5. Chill for a minimum of 2 minutes in the refrigerator before serving
