Description

This is a light rice dish that is easy to make. Goes great with grilled fish and meats. It can be served hot or as a cold salad.


Ingredients

  • 1  Cup(s) Rice, short grain
  • 1
  • 2  Cup(s) Water
  • 2
  • 1  Tea Spoon(s) Salt
  • 3
  • 1  Table Spoon(s) Cilantro, chopped
  • 4
  • ½  Each Lime Juiced
  • 5
  • 1  Table Spoon(s) Olive oil
  • 6
  • 1  To Taste Salt and Pepper
  • 7

Directions

    1. Add water and rice with a teaspoon of salt to a sauce pan.
    2. Bring to a simmer. Cover and let cook 24 minutes.
    3. Take off flame and let rest for 5 minutes.
    4. Mix together the oil, lime juice, cilantro, salt, pepper and add to the rice, mixing well.
    5. Plate up and top with more cilantro for garnish.
