A delicious thick (tapenade consistency) relish of roasted cipollini onions, great as a condiment with pan seared seafood dishes such as scallops or sea bass.


  • 6  Each Cipollini Onions, peeled
  • 1
  • 2  Table Spoon(s) Olive Oil
  • 2
  • 2  Tea Spoon(s) Champagne Vinegar
  • 3
  •  To Taste Salt & Pepper
  • 4


    1. Coat the onions with 1 tablespoon of olive oil
    2. Saute in a pan on medium heat with remaining olive oil
    3. Finish in a 350 degree oven for about 20 minutes
    4. Let roasted onions cool then chop up to desired consistency
    5. Add vinegar, salt and pepper
    6. Serve warm or chilled
