This tangy marinated feta is a great accompaniment in salads or smeared on grilled bread for a tasty hors d'oeuvres.


  • 3/4  Pound(s) Feta Cheese, cut into 1/4" slices
  • 1
  • 1  Each Baguette, sliced on the bias
  • 2
  • 3  Cup(s) Citrus Marinade
  • 3


    1. Cut feta on the bias to make triangles
    2. Line feta in a container and place to the side
    3. Pour Citrus Marinade over Feta
    4. Let rest for about 1 hour to absorb
    5. Drizzle each slice of baguette with olive oil.
    6. Season with salt and pepper
    7. Grill each side for about 2 minutes or until nicely charred
    8. Plate up crostini's
    9. Top with Marinated Citrus Feta
    10. Drizzle with extra Marinade
    11. Garnish with fresh basil

    Citrus Marinade


  • 4 Each Garlic Cloves, sliced
  • 4 Each Slices of Orange Peel
  • 3 Each Slices of Lemon Peel
  • 3 Each Slices of Lime Peel
  • 2 Cup(s) Olive Oil
  • Pinch Chili Flakes, dried
  • To Taste Salt & Pepper
  • 10 Each Sprigs of Fresh Thyme
  • 1/4 Cup(s) Fresh Basil, loosely packed
  • 1 Cup(s) Orange Juice, fresh
  • Directions

    1. Carefully slice garlic on a mandolin
    2. Heat olive oil in a saute pan over medium high heat
    3. Add citrus peels, garlic and a pinch of dried chili flakes to oil
    4. Season with salt and pepper to taste
    5. Let the oil come up to temperature, should be sizzling but not boiling
    6. Add basil and thyme
    7. Remove from heat and stir in the orange juice
