Clam Sauce: Mom Harkness Recipe

This is the clam sauce I grew up eating. My mom would use the seasoned progresso clams in the juice and kept it real simple. Thanks Mom!


  • 2  Cup(s) Clams, chopped
  • 1
  • 2  Cup(s) Clam Juice
  • 2
  • 1/2  Cup(s) Butter
  • 3
  •  To Taste Salt and Pepper
  • 4
  • 4  Each Garlic Cloves
  • 5
  •  To Taste Oregano
  • 6


    1. Melt 3 tablespoons of butter in a medium sauce pan
    2. Add the garlic and very lightly brown
    3. Add the clam juice, chopped clams and the rest of the butter
    4. Season with oregano, if dried use very little
    5. Simmer for 10 minutes
    6. Remove half the sauce
    7. Add the pasta to the remaining sauce and Simmer so the pasta and the sauce become one
    8. Pour pasta into a bowl and either cover with remaining sauce or serve extra sauce on the side
