Clams casino a great New England dish. Chef Richard Parente shows you how to impress your guests with this tasty clam dish that can be served both as an entree or an appetizer.


Ingredients

  • 1  Pound(s) Little Neck Clams, cleaned
  • 1
  • 1/2  Cup(s) Spanish Onion, small dice
  • 2
  • 1  Table Spoon(s) Garlic, minced
  • 3
  • 1/2  Cup(s) Roasted Red Pepper, diced
  • 4
  • 1/2  Cup(s) Bacon, cooked, chopped (save bacon fat)
  • 5
  • 1/4  Cup(s) Chicken Stock
  • 6
  • 1/4  Cup(s) White Wine
  • 7
  • 1/4  Cup(s) Italian Parsley, chopped
  • 8
  •  To Taste Salt
  • 9
  •  To Taste Pepper

Directions

    1. Sauté onions and garlic in bacon fat then add white wine
    2. Add clams then red pepper & chicken stock
    3. Cover and let steam for 2 minutes then finish off with parsley
    4. Pour into a bowl and serve with bread
