Description

Chef Ralph Fernandez's Seared Tuna recipe has many components, you can find them all from other chef's on the site. Tuna coat in a spice mix then seared off and served with a delicious baby arugula feta and watermelon salad.


Ingredients

  • 1  Each 10 Oz. Tuna Loin, 1" x 1"

  •  As Needed Salt & Pepper

  • 1  Table Spoon(s) Neutral Oil
  • 4
  • 8  Ounce(s) Weight Watermelon, cut into equal sizes as tuna

  • 4  Ounce(s) Weight Marinated Feta, crumbled
  • 6
  • 1  Table Spoon(s) Passion Fruit Vinaigrette
  • 7
  • 1  Tea Spoon(s) Aged Balsamic Vinegar or Balsamic Reduction

  • 1/2  Cup(s) Pickled Red Onions
  • 9
  • 1/4  Cup(s) Cherry Tomatoes, halved

  • 1 1/2  Cup(s) Baby Arugula

Directions

    1. Season tuna with salt and pepper
    2. Dredge tuna in spice mix, cover on each side
    3. In a saute pan on high heat, add oil
    4. Once oil is smoking hot, add tuna and sear quickly on each side, about 5 seconds each side
    5. Remove from pan and slice into 3 equal portions
    6. Plate up tuna and watermelon
    7. Drizzle with Passion Fruit Vinaigrette and balsamic
    8. In a seperate bowl, toss together feta with arugula, tomatoes and pickled red onion
    9. Place salad over tuna and watermelon
    10. Serve and enjoy

    Spice Mix

    Ingredients

  • 3 Table Spoon(s) Coriander
  • 3 Table Spoon(s) Fennel Seeds
  • 3 Table Spoon(s) Sesame Seeds, raw
  • Directions

    1. In a saute pan on medium heat, toast coriander and fennel until aromatic
    2. Place in a spice grinder with sesame seeds and grind up
