Description
Chef Ralph Fernandez's Seared Tuna recipe has many components, you can find them all from other chef's on the site. Tuna coat in a spice mix then seared off and served with a delicious baby arugula feta and watermelon salad.

Each 10 Oz. Tuna Loin, 1" x 1"

Table Spoon(s) Neutral Oil

Ounce(s) Weight Watermelon, cut into equal sizes as tuna

Ounce(s) Weight Marinated Feta, crumbled

Table Spoon(s) Passion Fruit Vinaigrette

Tea Spoon(s) Aged Balsamic Vinegar or Balsamic Reduction

Directions
- Season tuna with salt and pepper
- Dredge tuna in spice mix, cover on each side
- In a saute pan on high heat, add oil
- Once oil is smoking hot, add tuna and sear quickly on each side, about 5 seconds each side
- Remove from pan and slice into 3 equal portions
- Plate up tuna and watermelon
- Drizzle with Passion Fruit Vinaigrette and balsamic
- In a seperate bowl, toss together feta with arugula, tomatoes and pickled red onion
- Place salad over tuna and watermelon
- Serve and enjoy
