Description

This is Crayfish and Grits Casserole recipe is a Southern favorite. It's a creamy casserole full of cheese, grits and succulent crayfish.


Ingredients

  • 4  Cup(s) Water
  • 1
  • 1  Tea Spoon(s) Salt

  • 1  Table Spoon(s) Rosemary, fresh or dried
  • 3
  • 1  Tea Spoon(s) Black pepper, coarse ground
  • 4
  • 1  Cup(s) Grits
  • 5
  • 6  Ounce(s) Weight Parmesan
  • 6
  • 1/2  Cup(s) Butter, unsalted
  • 7
  • 1  Cup(s) Milk
  • 8
  • 4  Each Eggs, beaten
  • 9
  • ¼  Tea Spoon(s) Cayenne pepper
  • 10
  • 1  Each Garlic Clove
  • 11
  • 1  Cup(s) Crawfish Tails (optional)

  • 1  Cup(s) Vegetable Melange (onions, bell pepper, celery)

Directions

    1. Pre-heat oven to 350 degrees
    2. Grease a 2 quart casserole
    3. In a large saucepan, combine water and salt and bring to boil
    4. Add grits and cook for 5 min stirring occasionally, remove from heat
    5. Add cheese and butter, stir until melted
    6. Add milk, eggs, peppers and optional items (crayfish and vegetables)
    7. Mix well and pour into greased casserole
    8. Sprinkle with remaining cheese
    9. Bake at 350 degrees for 1 hour or until golden brown
    10. Remove from oven and let stand for approximately 10 min prior to serving
