Crayfish and Grits Casserole

Description
This is Crayfish and Grits Casserole recipe is a Southern favorite. It's a creamy casserole full of cheese, grits and succulent crayfish.
Ingredients
- 4 Cup(s) Water
- 1 Tea Spoon(s) Salt
- 1 Table Spoon(s) Rosemary, fresh or dried
- 1 Tea Spoon(s) Black pepper, coarse ground
- 1 Cup(s) Grits
- 6 Ounce(s) Weight Parmesan
- 1/2 Cup(s) Butter, unsalted
- 1 Cup(s) Milk
- 4 Each Eggs, beaten
- ¼ Tea Spoon(s) Cayenne pepper
- 1 Each Garlic Clove
- 1 Cup(s) Crawfish Tails (optional)
- 1 Cup(s) Vegetable Melange (onions, bell pepper, celery)
Directions
- Pre-heat oven to 350 degrees
- Grease a 2 quart casserole
- In a large saucepan, combine water and salt and bring to boil
- Add grits and cook for 5 min stirring occasionally, remove from heat
- Add cheese and butter, stir until melted
- Add milk, eggs, peppers and optional items (crayfish and vegetables)
- Mix well and pour into greased casserole
- Sprinkle with remaining cheese
- Bake at 350 degrees for 1 hour or until golden brown
- Remove from oven and let stand for approximately 10 min prior to serving
