Cucumber Salad with Grilled Vegetable Napoleon

Description
You will need a ring mold for this light and refreshing grilled vegetable napoleon salad. A great dinner party appetizer to impress your guests! Be sure to mold the cucumbers 2 hours in advance so the salad can set.
Ingredients
- 3 Each Cucumber Slices, sliced thinly on a mandoline
- 1/2 Cup(s) Mesclun Salad Blend
- 1 Each Eggplant Slice, grilled
- 1 Each Yellow Squash Slice, grilled
- 1 Each Tomato Slice
- 1 Each Zucchini Slice, grilled
- 1 Each Fresh Mozzarella Slice
- 1 Each Portobello Mushroom Slice, grilled
- 1 Table Spoon(s) Balsamic Vinaigrette
- Tea Spoon(s) Balsamic Vinegar or Balsamic Reduction (for garnish)
Directions
- Line outside of mold with cucumber slices
- Stuff mesclun leaves into mold
- Let set for at least 2 hours in refrigerator
- When ready to plate, place on plate and gently remove mold
- Layer eggplant, tomato, mozzarella, squash, zucchini and mushroom on the plate
- Drizzle balsamic over layers
- Dress mesclun salad with balsamic vinaigrette
- Serve and enjoy
