Description

You will need a ring mold for this light and refreshing grilled vegetable napoleon salad. A great dinner party appetizer to impress your guests! Be sure to mold the cucumbers 2 hours in advance so the salad can set.


Ingredients

  • 3  Each Cucumber Slices, sliced thinly on a mandoline
  • 1
  • 1/2  Cup(s) Mesclun Salad Blend
  • 2
  • 1  Each Eggplant Slice, grilled
  • 3
  • 1  Each Yellow Squash Slice, grilled
  • 4
  • 1  Each Tomato Slice
  • 5
  • 1  Each Zucchini Slice, grilled
  • 6
  • 1  Each Fresh Mozzarella Slice
  • 7
  • 1  Each Portobello Mushroom Slice, grilled
  • 8
  • 1  Table Spoon(s) Balsamic Vinaigrette
  • 9
  •  Tea Spoon(s) Balsamic Vinegar or Balsamic Reduction (for garnish)

Directions

    1. Line outside of mold with cucumber slices
    2. Stuff mesclun leaves into mold
    3. Let set for at least 2 hours in refrigerator
    4. When ready to plate, place on plate and gently remove mold
    5. Layer eggplant, tomato, mozzarella, squash, zucchini and mushroom on the plate
    6. Drizzle balsamic over layers
    7. Dress mesclun salad with balsamic vinaigrette
    8. Serve and enjoy
