Light & delicious summer time salad (that I enjoy year round). It takes about 15 minutes to make. About five ingredients. SO simple! Really good mixed with lentils too! Try and and you will see.


  • 6  Each Cucumber (Persian or Hot House) diced
  • 1
  • 1 1/2  Cup(s) Plain Yogurt
  • 2
  • 1/4  Cup(s) Water
  • 3
  • 3  Each Garlic Cloves, finely chopped
  • 4
  • 20  Each Mint Leaves, chopped
  • 5
  •  To Taste Salt
  • 6
  •  To Taste Pepper
  • 7


    1. In a large measuring cup, add half the water to the yogurt, mix well
    2. Add second half of water, mix well, add garlic, salt and pepper and set aside
    3. In a bowl, mix together cucumber and yogurt
    4. set in fridge for 20 minutes to allow flavors to set
    5. Enjoy as is, or on top of cooked lentils
