Light & delicious summer time salad (that I enjoy year round). It takes about 15 minutes to make. About five ingredients. SO simple! Really good mixed with lentils too! Try and and you will see.

Each Cucumber (Persian or Hot House) diced

Cup(s) Plain Yogurt

Cup(s) Water

Each Garlic Cloves, finely chopped

Each Mint Leaves, chopped

Directions
- In a large measuring cup, add half the water to the yogurt, mix well
- Add second half of water, mix well, add garlic, salt and pepper and set aside
- In a bowl, mix together cucumber and yogurt
- set in fridge for 20 minutes to allow flavors to set
- Enjoy as is, or on top of cooked lentils
