Top Chef Dave Martin's easy and delicious chocolate cake. Great served warm or cold.


Ingredients

  • 8  Ounce(s) Weight Bitter Sweet Chocolate, chopped
  • 1
  • 12  Table Spoon(s) Unsalted Butter (to taste)
  • 2
  • 1 1/3  Cup(s) Granulated Sugar
  • 3
  • 1  Tea Spoon(s) Vanilla Extract
  • 4
  • 2/3  Cup(s) All Purpose Flour
  • 5
  • 1  Tea Spoon(s) Kosher Salt
  • 6
  • 6  Each Eggs, large
  • 7
  • 1  Cup(s) Mini Chocolate Chips or Cocoa Nibs
  • 8
  •  As Needed Powdered Sugar (for dusting cakes)

Directions

    1. Preheat oven to 375 degrees
    2. Butter ramekins or muffin tins
    3. Over a double boiler, melt butter and chocolate, whisk until smooth
    4. whisk in sugar and vanilla
    5. whisk in flour and salt so all ingredients are completely incorporated
    6. Slowly beat in eggs one at a time until all are combined
    7. Place 2 - 3 ounces of batter into each buttered ramekin
    8. Sprinkle with chocolate chips or nibs
    9. Bake for 5 - 8 minutes
    10. Watch and rotate half way through (they are served best warm and gooey!)
    11. Finish with powdered sugar, fruit or anything you like
