Description
Ebelskivers are a Danish donut traditionally served with maple syrup or jam. Watch this video and Chef Macri will show you his secret recipe, you will need a Ebelskivers pan which you can find at any kitchenware store.

Directions
- In a large bowl, whisk together sugar and egg yolks
- Add salt and buttermilk, whisk until paler in color
- In a separate bowl, sift together flour, baking powder and baking soda
- Add the dry ingredients to the wet ingredients and mix to incorporate
- Whip egg whites until they reach a medium peak
- Gently fold egg whites into batter
- On your stove, heat up Ebelskiver pan on medium heat
- Add 1/2 tablespoon of shortening to each cup
- Let shortening melt then add 1 tablespoon of batter to each cup
- Flip each one around so they cook evenly, fry until golden brown on all sides, about 4-5 minutes
- Remove Ebelskivers from pan and place on a paper towel to drain excess oil
- Sprinkle with powdered sugar
- Serve with maple syrup or jam
