Description

Ebelskivers are a Danish donut traditionally served with maple syrup or jam. Watch this video and Chef Macri will show you his secret recipe, you will need a Ebelskivers pan which you can find at any kitchenware store.


Ingredients

  • 3  Each Egg Yolks
  • 1
  • 3  Each Egg Whites
  • 2
  • 2  Table Spoon(s) Sugar
  • 3
  • ½  Tea Spoon(s) Salt
  • 4
  • 2 1/4  Cup(s) Buttermilk
  • 5
  • 2  Cup(s) Flour
  • 6
  • 1  Table Spoon(s) Baking Powder
  • 7
  • 1  Table Spoon(s) Baking Soda
  • 8
  • 4  Table Spoon(s) Shortening
  • 9
  •  As Needed Powdered Sugar
  • 10
  •  As Needed Maple Syrup or Jam

Directions

    1. In a large bowl, whisk together sugar and egg yolks
    2. Add salt and buttermilk, whisk until paler in color
    3. In a separate bowl, sift together flour, baking powder and baking soda
    4. Add the dry ingredients to the wet ingredients and mix to incorporate
    5. Whip egg whites until they reach a medium peak
    6. Gently fold egg whites into batter
    7. On your stove, heat up Ebelskiver pan on medium heat
    8. Add 1/2 tablespoon of shortening to each cup
    9. Let shortening melt then add 1 tablespoon of batter to each cup
    10. Flip each one around so they cook evenly, fry until golden brown on all sides, about 4-5 minutes
    11. Remove Ebelskivers from pan and place on a paper towel to drain excess oil
    12. Sprinkle with powdered sugar
    13. Serve with maple syrup or jam
