Description

A lush chunky dressing tops these super ripe tomatoes. This preparation can be a meal in itself with the addition of a bit of bread.


Ingredients

  • 11  Each Black and Green Olives, pitted & chopped
  • 1
  • 1  Cup(s) Basil, Chopped
  • 2
  • 8  Each Anchovy Filets, chopped
  • 3
  • 1/8  Cup(s) Capers (optional)
  • 4
  • 3  Fluid ounce(s)  Olive Oil
  • 5
  • 1  Fluid ounce(s) Good Balsamic Vinegar
  • 6
  • 3  Each Tomatoes, large & ripe
  • 7
  • 1  Pinch Black Pepper
  • 8

Directions

    1. Chop and stir all ingredients together except the tomatoes
    2. Arrange the tomatoes on a platter and spoon dressing over them
    3. If you have leftovers, Chop the tomatoes into the dressing and toss over hot pasta the next day, serve warm or at room temperature
