Description

Hearty Soup with Escarole, Italian Sweet Sausage and cannellini beans.


Ingredients

  • 1/4  Cup(s) Extra Virgin Olive Oil
  • 1
  • 1  Pound(s) Sweet Italian Sausage
  • 2
  • 1  Cup(s) Onions, diced
  • 3
  • 1  Cup(s) Celery, diced
  • 4
  • 1  Cup(s) Carrots, diced
  • 5
  • 4  Each Garlic Cloves, minced
  • 6
  • 1  Each Head of Escarole, cleaned, chopped
  • 7
  • 2  Cup(s) Cannelloni Beans
  • 8
  • 2 1/2  Quart(s) Chicken Stock
  • 9
  •  To Taste Salt & Pepper
  • 10
  •  Pinch Red Pepper Flakes
  • 11
  •  To Taste Parmesan Cheese, grated (for garnish)
  • 12
  •  To Taste Fresh Parsley, chopped (for garnish)

Directions

    1. Remove sausage from casings
    2. In a large pot, add olive oil on medium high heat
    3. Once oil is hot, add sausage meat, break up with a spoon to brown evenly
    4. Add garlic and mix into sausage meat
    5. Add red pepper flakes and cook down for about 1 minute
    6. Add onions, celery and carrots and mix to combine
    7. Season with salt and pepper and stir, cook down for about 2 minutes
    8. Add chicken stock to pot and bring to a simmer
    9. Add beans and escarole to pot
    10. Cook for 15 - 20 minutes
    11. Serve in a bowl and garnish with Parmesan cheese and parsley, enjoy!
