Each Head of Escarole, cleaned, chopped

Directions
- Remove sausage from casings
- In a large pot, add olive oil on medium high heat
- Once oil is hot, add sausage meat, break up with a spoon to brown evenly
- Add garlic and mix into sausage meat
- Add red pepper flakes and cook down for about 1 minute
- Add onions, celery and carrots and mix to combine
- Season with salt and pepper and stir, cook down for about 2 minutes
- Add chicken stock to pot and bring to a simmer
- Add beans and escarole to pot
- Cook for 15 - 20 minutes
- Serve in a bowl and garnish with Parmesan cheese and parsley, enjoy!
