Description

Thinly shaved fennel with radish and cucumbers dressed in a citrus vinaigrette. Unique and refreshing side dish great for grilled and sauteed seafood and poultry.


Ingredients

  • 1  Cup(s) Fennel, shaved
  • 1
  • 3  Each Radish, shaved
  • 2
  •  Each Cucumber, seedless cut into 2" strips
  • 3
  • 2  Each Parsley Sprigs, leaves pulled apart
  • 4
  • 1  Pinch Salt, kosher
  • 5
  • 1  To Taste Black Pepper, freshly ground
  • 6
  • 3 1/2  Fluid ounce(s) Citrus Vinaigrette
  • 7

Directions

    1. Shave the fennel radish with your mandoline.
    2. Cut the cucumber into 2 inch strips. Pull leaves off parsley and break up.
    3. Mix all ingredients in a bowl and dress with citrus vinaigrette, see recipe on idealchef.com.
    4. Garnish with fennel tops.
