Fennel Slaw

Description
Thinly shaved fennel with radish and cucumbers dressed in a citrus vinaigrette. Unique and refreshing side dish great for grilled and sauteed seafood and poultry.
Ingredients
- 1 Cup(s) Fennel, shaved
- 3 Each Radish, shaved
- ⅓ Each Cucumber, seedless cut into 2" strips
- 2 Each Parsley Sprigs, leaves pulled apart
- 1 Pinch Salt, kosher
- 1 To Taste Black Pepper, freshly ground
- 3 1/2 Fluid ounce(s) Citrus Vinaigrette
Directions
- Shave the fennel radish with your mandoline.
- Cut the cucumber into 2 inch strips. Pull leaves off parsley and break up.
- Mix all ingredients in a bowl and dress with citrus vinaigrette, see recipe on idealchef.com.
