Description

Chef Mike uses Drum Fish in his fish taco recipe but you can use any type of fish you would like.


Ingredients

  • 2  Each Drum Fish Filet's
  • 1
  • 2  Each Flour Tortillas
  • 2
  • 1  Ounce(s) Weight Cotija Cheese, grated
  • 3
  • 2  Table Spoon(s) Unsalted Butter, melted
  • 4
  •  As Needed Salt & Pepper
  • 5
  • 3/4  Cup(s) Asian Slaw
  • 6
  • 2  Table Spoon(s) Chili Aioli
  • 7
  • 2  Table Spoon(s) Sesame Guacamole
  • 8
  • 2  Table Spoon(s) Tomato Ginger Salsa
  • 9
  • 1 ½  Tea Spoon(s) Olive Oil

Directions

    1. Season fish with salt, pepper and olive oil.
    2. On a hot grill, grill fish on each side.
    3. Place tortillas on grill and grill one side until just marked, flip and brush grilled side with butter then add cheese.
    4. Remove tortillas from grill and place on a plate.
    5. Top each tortilla with Asian slaw then fish.
    6. Dollop with tomato ginger salsa and sesame guacamole.
    7. Drizzle with chili aioli and cotija cheese.

    Asian Slaw

    Ingredients

  • 1/4 Cup(s) Cabbage, Carrots, Cucumber, Onion, thinly sliced
  • ½ Table Spoon(s) Olive Oil
  • 1 Tea Spoon(s) Rice Wine Vinegar
  • 1 ¼ Pinch Salt & Pepper
  • Directions

    1. In a mixing bowl, mix in all ingredients
    2. Taste and season if necessary

    Chili Aioli

    Ingredients

  • 1 Tea Spoon(s) Sriracha Chili Sauce
  • 1/2 Cup(s) Mayonnaise
  • Directions

    1. In a mixing bowl, whisk chili sauce and mayo together to combine
