Description

Flourless chocolate torte, serve hot or cold, chocolate to the 10th degree!


Ingredients

  • 5  Ounce(s) Weight Semi Sweet Chocolate Disks
  • 1
  • 3  Ounce(s) Weight Bitter Chocolate Disks
  • 2
  • 1/4  Cup(s) Butter, unsalted, cold, cubed
  • 3
  • 2  Each Egg Yolks, large
  • 4
  • 2  Each Eggs, large
  • 5
  • 1/2  Cup(s) Granulated Sugar
  • 6
  • 1/4  Cup(s) Coffee or Espresso
  • 7
  • 1 ¼  Table Spoon(s) Vanilla Extract

Directions

    1. Place a pot of water on the stove and let water come to a simmer
    2. In a bowl add chocolates, butter and coffee
    3. Place bowl over hot water and let the steam melt the chocolate and butter
    4. in a bowl, whisk the eggs, yolks and sugar, whisk for 5 minutes until mixture is creamy and has increased 2.5 times in volume
    5. Add the vanilla extract
    6. Pour chocolate mixture into egg & sugar mixture in 2 stages, fold in each stage to combine butter and sugar
    7. Pour mixture into molds or ramekins
    8. Pre heat oven to 325 degrees
    9. Place molds in a pan and then fill pan with water to create a bath for the molds the water should be a 1/2 inch high
    10. Bake for 30 minutes
    11. Take out of oven let cool for 10 minutes, take out of molds
    12. Cake should be served hot or cold.
    13. If serving hot they can be reheated in an oven for 3 minutes
