Directions
- Place a pot of water on the stove and let water come to a simmer
- In a bowl add chocolates, butter and coffee
- Place bowl over hot water and let the steam melt the chocolate and butter
- in a bowl, whisk the eggs, yolks and sugar, whisk for 5 minutes until mixture is creamy and has increased 2.5 times in volume
- Add the vanilla extract
- Pour chocolate mixture into egg & sugar mixture in 2 stages, fold in each stage to combine butter and sugar
- Pour mixture into molds or ramekins
- Pre heat oven to 325 degrees
- Place molds in a pan and then fill pan with water to create a bath for the molds the water should be a 1/2 inch high
- Bake for 30 minutes
- Take out of oven let cool for 10 minutes, take out of molds
- Cake should be served hot or cold.
- If serving hot they can be reheated in an oven for 3 minutes
