Fried Green Tomatoes with a Crab Remoulade

A delicious sandwich of crab meat remoulade between two fried green tomatoes and served with a creamy apple puree.


  • 4  Each Granny Smith Apples, peeled, cored, diced
  • 1
  • 2  Table Spoon(s) Butter, unsalted
  • 2


    1. Place apples in a pot with water
    2. Add butter
    3. Simmer on low heat, covered, for about 1 hour or until soft
    4. Remove from heat and puree in a blender
    5. Refrigerate until cool
    6. Plate up with apple puree
    7. Layer with fried green tomato then crab remoulade and then a fried green tomato
    8. Drizzle with olive oil
    9. Serve and enjoy!

    Crab Meat Remoulade


  • 1 Pound(s) Jumbo Lump Crab Meat
  • 1/2 Cup(s) Mayonnaise
  • 1 Table Spoon(s) Capers, drained and rinsed
  • To Taste Salt & Pepper
  • 1 Table Spoon(s) Lemon Juice, fresh
  • 1 Tea Spoon(s) Tarragon
  • 1 Tea Spoon(s) Parsley, finely chopped
  • 1 Table Spoon(s) Relish
  • Directions

    1. Add all ingredients to a mixing bowl and mix to incorporate
