Description

A healthy meal of fresh cod, fruits and nuts, lots of omega 3's! You can serve it with Cous Cous, Rocket salad and Lobster sauce.


Ingredients

  • 7 1/8  Ounce(s) Weight Cod Fillet
  • 1
  • 1/3  Ounce(s) Weight Orange Wedges
  • 2
  • 1/3  Ounce(s) Weight Grapefruit Wedges
  • 3
  • 1/3  Ounce(s) Weight Lime Wedges
  • 4
  • 1/3  Ounce(s) Weight Pecans and Walnuts
  • 5
  • 1  Tea Spoon(s) Olive Oil
  • 6
  • 1  Tea Spoon(s) Sea Salt
  • 7
  • ¼  Tea Spoon(s) Red Pepper Flakes, crushed
  • 8

Directions

    1. Dry cod and cover with olive oil, salt and pepper
    2. Place on a hot grill; roughly 1 minute each side
    3. Remove from grill and place on a baking dish
    4. Place fruit wedges and nuts on top of the fillets
    5. Finish in the broiler for 5-6 minutes
