Description

This is a Great tasting Greek rendition of an Italian Classic. Spinach and Feta Dumplings served with a rich Cream Sauce. This is an very easy dish to make and we be loved by all.


Ingredients

  • 4  Table Spoon(s) Butter
  • 1
  • 1/2  Cup(s) White Wine
  • 2
  • 3  Fluid ounce(s) Heavy Cream
  • 3
  • 4  Table Spoon(s) Feta Cheese
  • 4
  • 1  Tea Spoon(s) Chives, chopped
  • 5
  • 1  Tea Spoon(s) Dill, chopped
  • 6
  • 2  Table Spoon(s) Olive Oil
  • 7
  • 1  Table Spoon(s) Feta, crumbled (for garnish)
  • 8
  •  As Needed Micro Greens or Parsley (for garnish)

  • 1  Table Spoon(s) Olive Oil (for garnish)

Directions

    1. Melt butter in a pan 
    2. Add white wine and let reduce a bit
    3. Add heavy cream and keep reducing
    4. Add feta cheese, dill, chives and oil
    5. Let simmer for a minute then add the Gnocchi, let cook for 3 minutes
    6. Plate the Gnocchi in a bowl
    7. Garnish with phyllo chips, feta, micro greens and olive oil
    8. Enjoy!

    Gnocchi

    Ingredients

  • 3 Each Eggs
  • 1 Cup(s) Feta Cheese
  • 2 Cup(s) Flour
  • 1 Cup(s) Spinach, cooked and drained
  • Directions

    1. In a food processor, combine eggs and feta cheese
    2. Add flour to processor and mix until incorporated
    3. Add the spinach and puree until fully incorporated
    4. Place the mixture in a pastry bag with no tip and slowly squeeze out 3/4" pieces into salted boiling water
    5. Once they float, cook for another 3 minutes
    6. Strain and set aside

    Phyllo Chips

    Ingredients

  • 8 Table Spoon(s) Butter, melted
  • 2 Each Phyllo Sheets
  • Directions

    1. Cut phyllo sheets into desired shape
    2. Brush pan with melted butter
    3. Place phyllo on buttered pan
    4. Brush the top of phyllo with butter
    5. Bake in the oven until golden brown
    6. Watch carefully, they do burn easily
