Gorgonzola Polenta

Description
Polenta is the ultimate comfort food that with the addition of a few simple ingredients, you can elevate a basic staple into a gourmet side dish.
Ingredients
- 2 Cup(s) Heavy cream
- 1 1/2 Cup(s) Water or Chicken Stock
- 1 Cup(s) Cornmeal, polenta
- 2 Ounce(s) Weight Gorgonzola Cheese
- 1 Table Spoon(s) Butter, unsalted
- To Taste Salt and White Pepper
Directions
- Bring the water and cream to a boil in a heavy large saucepan
- Add salt
- Gradually whisk in the cornmeal
- Reduce heat to low and simmer until the mixture thickens and the cornmeal is tender, stirring often, about 15 to 25 minutes
- Turn off the heat
- Add butter and Gorgonzola and stir until the cheese melts
- Season with additional salt and pepper, ONLY if needed after tasting
- Set aside and keep warm
