Description

Perfectly cured salmon, sliced thin and served with a sweet mustard sauce. Great as an appetizer or make tasty canapés.


Ingredients

  • 1  Each Salmon Fillet, one side, boneless, skinless
  • 1
  • 2  Each Dill Bunches
  • 2
  • 3  Each Lemons, for zest and slices
  • 3
  • ½  Tea Spoon(s) Chives, chopped
  • 4
  •  Pinch Sea Salt
  • 5
  •  As Needed Lemon Olive Oil
  • 6
  • 1/4  Cup(s) Pickled Cucumbers
  • 7

Directions

    1. In a non reactive pan, cover both sides of  salmon fillet thoroughly with the cure mixture
    2. Top with lemon slices and fresh dill
    3. Cover with plastic and refrigerate for 12 hours
    4. Unwrap then add more cure mix re-wrap
    5. Place back in refrigerator for another 12 hours
    6. When the salmon is cured rinse off excess mix and pat dry with towel
    7. To plate up, slice desired amount of salmon, place on plate
    8. Garnish with mustard sauce, lemon olive oil, pickled cucumbers, sea salt, and chives
    9. Enjoy!

    Pickle Cucumbers

    Ingredients

  • 1/4 Cup(s) Cucumbers
  • 1 Table Spoon(s) Vinegar
  • 2 Table Spoon(s) Sugar
  • 3 Table Spoon(s) Water
  • Directions

    1. Dice the cucumbers.
    2. Mix vinegar, sugar and water in a small pot, add any aromatics you desire simmer until sugar is dissolved and allow to cool.
    3. Pour this mix over the cucumbers and allow it to marinate overnight in refrigerator.

    Cure Kit

    Ingredients

  • 2 Cup(s) Kosher Salt
  • 1 1/2 Cup(s) Sugar White
  • 3 Table Spoon(s) Black Pepper
  • Directions

    1. Add salt, sugar and pepper in a bowl and mix.

    Mustard Sauce

    Ingredients

  • 1/4 Cup(s) Red Wine Vinegar
  • 1 ½ Table Spoon(s) Whole Grain Mustard
  • 3 Table Spoon(s) Swedish Mustard
  • 2 Table Spoon(s) Honey
  • To Taste Salt and Pepper
  • 1/4 Cup(s) Olive Oil
  • 2 Table Spoon(s) Coffee
  • 2 Table Spoon(s) Rice Wine Vinegar
  • Directions

    1. Add all ingredients in a bowl and mix vigorously
