Green Banana and Yellow Plantain Salad

A combination of sweet yellow plantain, savory green banana and a little spice make for a refreshing salad with a kick.


  • 1  Each Green bananas
  • 1
  • 1  Each Yellow Plantains(semi-ripe)
  • 2
  • ¼  Each Red Onion, thin slice
  • 3
  • 1/4  Cup(s) Red pepper, small dice
  • 4
  • 1  Table Spoon(s) Jalepaneo pepper (seeded) minced
  • 5
  • ½  Each Scotch Bonnet Pepper, seeded, Optional
  • 6
  • 2  Table Spoon(s) Canola oil
  • 7
  • 1  Each Lime, juiced
  • 8
  •  To Taste Salt and Pepper

    1. Once bananas and plantain are cool enough to handle cut into large dice.
    2. Place in a non-reactive bowl and combine other ingredients.
    3. Add salt and pepper to taste.
    4. Garnish with parsley .
    5. Can be served cold or at room temperature.

    To cook the Banna and Plantain


  • ½ Each Lime, Juiced
  • 1 Tea Spoon(s) Canola oil
  • Directions

    1. Put two separate pots of cold water on to boil.
    2. In one pot put a few drops of lime juice and a few drops of oil.
    3. Place the green banana in the pot with the oil and lime juice and the plantain in the other pot of water.
    4. While the bananas and plantain are boiling juilenne the red onion, cut the red pepper into small dice and minced the jalepaneo.
    5. Check the plantain and green banana for doneness by placing the tip of a sharp knife through it.
    6. If the knife goes through with no resistance this means it's done.
    7. Pour out the water and let cool.
