Description

This is a Great side dish for chicken, pork, or shrimp. Creamy Hominy Grits with Tasso Ham finished with Spicy Pepper Jack Cheese. Creamy Yummy Goodness!


Ingredients

  • 2  Table Spoon(s) Oil
  • 1
  • 1/3  Cup(s) Tasso Ham, small dice
  • 2
  • 1/4  Cup(s) Shallots, small dice
  • 3
  • 1/3  Cup(s) Red Bell Peppers, small dice
  • 4
  • 1  Table Spoon(s) Garlic, minced
  • 5
  • 3 1/2  Cup(s) Chicken Stock
  • 6
  • 1  Cup(s) Hominy Grits
  • 7
  • 1  Cup(s) Heavy Cream
  • 8
  • 1/2  Cup(s) Pepper Jack Cheese, small dice
  • 9
  • 1  Table Spoon(s) Butter
  • 10
  • 1  Table Spoon(s) Scallions, thinly sliced

Directions

    1. Heat oil in a saute pan
    2. Add the ham and brown until it takes on a bit of color and gets crispy
    3. Add the shallots, peppers and garlic and sweat out until the peppers get soft
    4. Add the stock and mix well
    5. Slowly mix in grits, let cook on low heat until liquid is absorbed
    6. Add the cream and mix until it is absorbed
    7. mix in the cheese and let melt through the grits
    8. Finish with butter then the scallions
    9. Taste and adjust seasoning
    10. Serve with your favorite dish
