Description

This unique and delicious spring time salad is always refreshing. A perfect use of jicama in this lightly tart salad with hunks of buttery avocado.


Ingredients

  • 1  Each Jicama, julienned
  • 1
  • 1  Each Ripe Avocado, diced
  • 2
  • 1  Each Grapefruit, supremed (save the juice)
  • 3
  • 2  Cup(s) Baby Arugula (or any other salad green)
  • 4
  • 3  Fluid ounce(s) Olive Oil
  • 5
  • 1/4  Cup(s) Cilantro, roughly chopped
  • 6
  • 2  Table Spoon(s) Shallots, minced
  • 7
  • 1  To Taste Salt & Pepper

Directions

    1. Place avocado, jicama, grapefruit and half of grapefruit juice in a bowl
    2. To make dressing, whisk shallots, oil, grapefruit juice and cilantro together
    3. Season with salt and pepper to taste
