This is a Great preparation of any whole fish between 1 and 2 pounds. Moist and Crunch all at the same time. Serve this delicious porgy with your favorite summer salad.

Pound(s) Whole Fish (your preference)

To Taste Salt and Pepper

To Taste Granulated Garlic (not powder)

As Needed Cracker Meal (to coatch fish)

As Needed Fresh Herbs (your preference)

Table Spoon(s) Olive Oil

Each Lemon, cut into wedges (for garnish)

Directions
- Preheat oven to 400 degrees
- Scale and gut fish then score on both sides
- Season with salt, pepper, granulated garlic and herbs
- Coat fish on both sides with cracker meal
- Using a pan large enough for your fish, heat oil in pan and sear fish until golden brown on one side
- Flip fish to the other side and finish in the oven for 8 to 12 minutes, depending on the size of the fish
- Check the fish to make sure flesh is cooked to the bone
- Plate up, top with lemon wedges and dress with passion fruit vinaigrette
