Description

Sauteed vegetables with sweet potato noodles. You can find these ingredients at your local Asian market.


Ingredients

  • 1  Pound(s) Sweet Potato Noodles, cooked in boiling water for 5 minutes, rinsed well

  • 1  Table Spoon(s) Garlic, minced
  • 2
  • 2  Each Green Peppers, seeds removed, julienned
  • 3
  • 4  Each Red Peppers, seeds removed, julienned
  • 4
  • 1  Each Carrot, julienned
  • 5
  • 2  Each Cucumbers
  • 6
  • 15  Each Dried Shiitake Mushrooms, soaked in water for atleast 20 minutes

  • 1  Each Gobo Root

  • 1  Each Onion, julienned
  • 9
  • 6  Table Spoon(s) Vegetable Oil
  • 10
  •  To Taste Salt & Pepper

  • 3/4  Cup(s) Soy Sauce, low sodium
  • 12
  • 1  Table Spoon(s) Honey Powder (or sugar)

  • 1  Table Spoon(s) Sesame Oil

  • 1  Tea Spoon(s) White Sesame Seeds, toasted

Directions

    1. Once mushrooms are finished soaking, remove stems then julienne them
    2. Wet gobo root, using steel wool, scrub the outer layer off until cleaned, cut ends off then julienne them
    3. Peel cucumbers and reserve the skin, julienne the skin
    4. Heat a nonstick pan with 2 tablespoons of oil
    5. Add cucumber skin, season with salt, saute until soft, about 2 - 3 minutes
    6. Remove from pan and place in a large mixing bowl
    7. Add more oil to coat bottom of pan
    8. Add carrots, season with salt, saute until soft, about 2 - 3 minutes
    9. Remove from pan and place in the mixing bowl
    10. Add more oil to coat bottom of pan
    11. Add gobo, season with salt, saute until soft, about 2 - 3 minutes
    12. Remove from pan and place in the bowl
    13. Add more oil to coat bottom of pan
    14. Add mushrooms, season with salt, saute until colored
    15. Remove from pan and place in the bowl
    16. Add more oil to coat bottom of pan
    17. Add onions, saute until slightly colored then season with salt, mix
    18. Remove from pan and place in the bowl
    19. Add peppers, season with salt, saute until soft, about 2 - 3 minutes
    20. Remove from pan and place in the bowl
    21. Add more oil to coat bottom of pan
    22. Add noodles to pan, if they stick a bit more oil
    23. saute for 1 minute
    24. Add 1/2 cup of soy sauce, toss to combine well
    25. Form a small well in the center of the noodles, add garlic to well
    26. Lightly cook garlic then mix in with noodles
    27. While noodles are in pan, cut noodles with a scissor (optional)
    28. Add vegetables to pan and mix to combine
    29. Add the rest of the soy sauce, black pepper, honey powder, mix
    30. Turn off flame, add sesame oil
    31. Finish with sesame seeds
    32. mix well, serve and enjoy!
