Description
This is a basic lemon butter sauce that can be used for many different dishes. It is an emulsion of butter and lemon juice.

Table Spoon(s) Butter, unsalted, cold and cubed

Tea Spoon(s) Lemon Zest

To Taste Salt, Kosher

Directions
- Heat lemon juice in a thick bottom sauce pot
- Over medium heat, whisk in the butter to form an emulsion, do not let the sauce get too cold or hot or it will break and lose its creamy consistency
- Finish sauce with the lemon zest and salt, taste and adjust seasoning
- Keep in a warm place and serve as needed
- Must be used the same day it is made
