Description
Linzer cookies are a classic Holiday treat! Delicious shortbread cookies, layered with raspberry jam and dusted with confectioner's sugar.

Each Egg, large

Cup(s) Raspberry Jam or Jelly

As Needed Sugar, confectioners

Directions
- Preheat oven to 350 degrees
- In a standing mixing bowl or a hand held electric mixer, cream sugar and butter
- Add egg to mix, incorporate
- Add flour to mixture to create a dough
- Take dough out of bowl, place on parchment paper, let rest in refrigerator for one hour
- Flour a board, roll out dough to 1/4" thickness
- Using a round 2" cutter, cut rounds and place on a parchment covered sheet pan
- Bake cookies for 7-10 minutes
- Remove from oven and place on a wire rack to cool
- Once cool, take one cookie and spread a thin layer of raspberry jelly on top, then take another and place on top to create a sandwich
- Dust finished cookies with confection sugar
