Description

Lobster and crab meat mixed with a mayo-mustard mixture and panko bread crumbs then lightly sauteed and baked. These go great with Chef Charles' Roasted Red Pepper and Sambuca Cream Sauce. You can make these any size you would like but be sure to adjust the cooking time.


Ingredients

  • 12  Fluid ounce(s) Clarified Butter
  • 1
  • 1  Cup(s) Onions, diced
  • 2
  • 1  Cup(s) Red Pepper, Green Pepper, Carrots, diced
  • 3
  • 1/2  Cup(s) Mayonnaise
  • 4
  • 1  Each Egg
  • 5
  • 1  Table Spoon(s) Whole Grain Mustard
  • 6
  • 1  Table Spoon(s) Sherry
  • 7
  • 1 1/2  Cup(s) Lobster Meat, knuckles & claws, chopped
  • 8
  • 1  Cup(s) Crab Meat
  • 9
  • 1  Cup(s) Panko Bread Crumbs

  •  As Needed Salt

Directions

    1. Add 2 tablespoons of clarified butter to a hot saute pan on medium high heat
    2. Add onions, carrots, red and green peppers
    3. saute until translucent, about 2 - 3
    4. Season with salt
    5. Remove and let cool
    6. In a mixing bowl, whisk together mayonnaise, mustard, egg and sherry
    7. Add lobster and crab meat and mix to combine and coat
    8. Refrigerate
    9. Add sauteed vegetables to a food processor and pulse about 5 times
    10. Add to crab and lobster meat, mix well to combine
    11. Gradually add breadcrumbs while mixing
    12. Let sit for 1 minute, taste and Season if necessary
    13. Form mixture into 5 ounce patties
    14. For each patty, fry in 2 ounces of clarified butter for about 2 minutes on each side
    15. Finish in the oven for 3 minutes
