One Big momma manly sized Mexican omelette!


Ingredients

  • 3  Tea Spoon(s) Eggs
  • 1
  • 3  Table Spoon(s) Roasted Peppers, sliced
  • 2
  • 3  Table Spoon(s) Mushrooms, sliced
  • 3
  • 3  Table Spoon(s) Red Onion, sliced
  • 4
  • 3  Ounce(s) Weight Chorizo Sausage, diced
  • 5
  • 1  Table Spoon(s) Chihuahua Cheese
  • 6
  • 3  Table Spoon(s) Cotija Cheese
  • 7
  • 1  Table Spoon(s) Cilantro, chopped
  • 8
  • 2  Each Corn Tortilla
  • 9
  • 1  Fluid ounce(s) Olive Oil

  • 1/4  Cup(s) Black Beans, refried
  • 11
  • ½  Each Avocado, sliced

  • 1  To Taste Salt and Pepper

Directions

    1. Fry peppers, onions and mushrooms over medium high heat
    2. Add the eggs over medium heat and stir the edges in to form a curd in the middle
    3. Fold edges over and add  cheese
    4. Place eggs on 2 grilled tortillas that have been topped with refried black beans
    5. Garnish with cilantro and avocado
