Directions
- Fry peppers, onions and mushrooms over medium high heat
- Add the eggs over medium heat and stir the edges in to form a curd in the middle
- Fold edges over and add cheese
- Place eggs on 2 grilled tortillas that have been topped with refried black beans
- Garnish with cilantro and avocado
