Pound(s) Fresh Curd, cut into cubes

Directions
- Place curd in a large bowl
- Cover with hot water and let sit to temper for 5 - 10 minutes
- In a large pot, boil water and season with salt
- Remove curd from hot water and place into another large bowl
- Pour boiling water over curd and break up all the pieces
- Let sit in hot water for 2 minutes
- Remove curd from water using a spider or a slotted spoon
- Slowly pull pieces together and kneed with your hands to form one solid mass
- Once solid mass is formed, use the back of your hands and pick up curd
- Let curd pull itself down to stretch out
- Lay out plastic wrap on a flat surface
- Roll mozzarella into whatever form you prefer (watch video to see different forms)
- Serve or refrigerate
