A light and fresh salad with a Mediterranean feel.


Ingredients

  • 6  Ounce(s) Weight Roma Tomatoes, chopped

  • 6  Ounce(s) Weight Romaine Lettuce, shredded

  • 6  Ounce(s) Weight Cucumber, peeled, seeded, diced
  • 3
  • 2  Ounce(s) Weight Scallion, chopped on the bias
  • 4
  • 1  Each Lemon, juiced
  • 5
  • 4  Ounce(s) Weight Pita Bread, toasted, broken into small pieces

  • 2  Tea Spoon(s) Extra Virgin Olive Oil
  • 7
  • 1  Ounce(s) Weight Fresh Mint Leaves, chopped
  • 8
  • 1  Ounce(s) Weight Kosher Salt
  • 9
  • 1  Tea Spoon(s) Black Pepper

  • 1  Tea Spoon(s) Sumac

  • 2  Ounce(s) Weight Feta Cheese, crumbled

Directions

    1. In a mixing bowl, toss together tomatoes, romaine, cucumber, scallion, pita and half of sumac
    2. Dress ingredients with lemon juice, olive oil and mint
    3. Season with salt and pepper
    4. Place on chilled plate and top with the feta cheese
    5. Place olives on either side of the plate
    6. Sprinkle the remainder of sumac on top
