Description

Orecchiette Pasta with sliced veal sausage, broccoli rabe, garlic and oil


Ingredients

  • 6  Each 3 Oz. Veal Sausage Links
  • 1
  • 1  Pound(s) Orecchiette Pasta, cooked al dente
  • 2
  • 2  Each Bunches of Broccoli Rabe, stems off
  • 3
  • 1  Cup(s) Reserved Pasta Water
  • 4
  • 6  Each Garlic Cloves, thinly sliced
  • 5
  • 1/4  Cup(s) Olive Oil
  • 6
  •  To Taste Salt
  • 7
  •  To Taste Pepper
  • 8
  • ¼  Tea Spoon(s) Red Pepper Flakes
  • 9
  • 1/4  Cup(s) Pecorino Romano Cheese, grated
  • 10

Directions

    1. Place veal sausage on baking sheet and bake in a 350 degree oven for 15 minutes, let cool
    2. In a pot with boiling water, blanche broccoli rabe, take out and place in bowl
    3. When veal sausage is cooled, slice and put on plate
    4. In sauce pot over medium high heat, add olive oil and garlic, cook until slightly golden
    5. Add veal sausage, cook for about 2 minutes
    6. Add broccoli rabe and salted pasta water, cook for about 2 to 3 minutes
    7. Add pasta and toss together
    8. Add grated pecorino romano cheese, toss and plate
