A pan seared rack of pork topped with sweet apples and caramelized onions with a hint of cinnamon. A true American favorite.

Cup(s) Red Wine Vinegar

Cup(s) Onions, sliced

To Taste Salt & Pepper

Directions
- Add vinegar and sugar to a pot, reduce until lightly thick
- Season pork with salt and pepper
- In another pan, sear pork in butter and oil until brown on both sides
- Add the onions in same pan and start to caramelize
- Add apples and mix to combine
- If pork is thick, Season with cinnamon and finish in the oven
- Once onions and apples are caramelized, check the vinegar and sugar mixture, if getting syrupy add apple cider and let simmer for 5 minutes
- Add mixture to onions and apples, let reduce for a bit
- Taste and Season
- When pork is at the desired doneness (approximately 150 degrees internal temperature) remove from oven and let rest for 4 to 5 minutes
- Plate or platter up
- Place apple, onion mixture on the side and pour sauce on the pork
