Description

A pan seared rack of pork topped with sweet apples and caramelized onions with a hint of cinnamon. A true American favorite.


Ingredients

  • 2  Each Rack of Pork, double bone cut
  • 1
  • 1/2  Cup(s) Red Wine Vinegar
  • 2
  • 1/2  Cup(s) Sugar
  • 3
  • 1  Table Spoon(s) Butter
  • 4
  • 1  Table Spoon(s) Oil
  • 5
  • 1/2  Cup(s) Onions, sliced
  • 6
  • 1/2  Cup(s) Apples, diced
  • 7
  • ½  Tea Spoon(s) Cinnamon
  • 8
  • 1/3  Cup(s) Apple Cider
  • 9
  •  To Taste Salt & Pepper
  • 10

Directions

    1. Add vinegar and sugar to a pot, reduce until lightly thick
    2. Season pork with salt and pepper
    3. In another pan, sear pork in butter and oil until brown on both sides
    4. Add the onions in same pan and start to caramelize
    5. Add apples and mix to combine
    6. If pork is thick, Season with cinnamon and finish in the oven
    7. Once onions and apples are caramelized, check the vinegar and sugar mixture, if getting syrupy add apple cider and let simmer for 5 minutes
    8. Add mixture to onions and apples, let reduce for a bit
    9. Taste and Season
    10. When pork is at the desired doneness (approximately 150 degrees internal temperature) remove from oven and let rest for 4 to 5 minutes
    11. Plate or platter up
    12. Place apple, onion mixture on the side and pour sauce on the pork

Great restaurant

Went to Page one and really enjoyed chef Jeanine's food.
