This is truly a wonderful dish. Halibut filet topped with shrimp mousse wrapped in Parma Ham. Seared and finished in the oven. The combination of the Salty Crispy Parma Ham and the Sweet Creamy Shrimp Mousse is fantastic.


  • 5  Ounce(s) Weight Halibut Filet

  • 2  Fluid ounce(s) Shrimp Mousse
  • 2
  • 1  Each Parma Ham, sliced thin use 2 if needed
  • 3
  • 3  Each Fennel Frawns
  • 4
  • 1  Pinch Salt, kosher
  • 5
  • 1  Pinch Black Pepper, freshly ground

  • 1  Table Spoon(s) Oil, vegetable or blended

    1. Season halibut on both sides
    2. Using a pastry bag cover the top side with the shrimp mousse
    3. Arange fennel frawns on top of the mousse
    4. Carefully wrap the fish with Parma Ham as shown on video
    5. Heat oil in a thick bottom pan and sear the top side first
    6. Flip over and finish in the oven until done
    7. Serve with Scott's accompaniments or anything you like!
