Easy and delicious Salmon Dish. Seared salmon with a lemon butter sauce flavored with capers and tomatoes. Serve the extra sauce with your favorite pasta or rice.

Cup(s) Plum Tomatoes, diced

Directions
- Heat oil in a large saute pan on high flame
- When oil is hot, add salmon skin side up and brown on both sides
- When salmon is browned, strain out excess oil
- Add white wine, lemon juice, butter, capers, diced tomatoes, parsley, salt and pepper to pan
- Cook for about 3 minutes over high heat
- Remove salmon and place on serving plate garnished with lemon
- Cook sauce for another 2 minutes until reduced down and pour sauce over salmon
