Description

Italian Bread Salad. Lightly toasted Bread salad tossed with delicious ingredients. Dressed with extra virgin olive oil and balsamic vinegar


Ingredients

  • ½  Each French or Rustic Bread, cut in 1" cubes

  • 1  Fluid ounce(s) Olive Oil, to season bread
  • 2
  • 2  Table Spoon(s) Parmesan, grated to season bread
  • 3
  • 1  To Taste Salt & Pepper, to season bread
  • 4
  • 3  Cup(s) Ripe tomatoes, diced
  • 5
  • 8  Ounce(s) Weight Fresh Mozzarella, diced
  • 6
  • 2/3  Cup(s) Red Onion, thinly sliced
  • 7
  • 1/3  Cup(s) Basil, chiffonade
  • 8
  • 1/4  Cup(s) Extra Virgin Olive Oil (for dressing)

  • 3  Table Spoon(s) Balsamic Vinegar

  • 1  To Taste Salt & Pepper

Directions

    1. Dress bread cubes with oil, salt, pepper and parmesan
    2. Toast on sheet pan until slightly golden and still soft in middle
    3. Mix the tomato, mozzarella and red onion together
    4. Dress with the extra virgin olive oil and balsamic vinegar
    5. Finish with basil, salt and pepper
    6. Taste and adjust (may need more oil or vinegar depending on personal preference)
