Pasta e Fagioli

Description
Pasta fagioli is a soup made using pomodoro sauce, cannellini beans and any type of small pasta you like.
Ingredients
- 1 Pound(s) Ditalini Pasta, cooked al dente
- 6 Each Garlic Cloves, thinly sliced
- 1 Cup(s) Onions, diced
- 1 Cup(s) Carrots, diced
- 1 Cup(s) Celery, diced
- 2 Cup(s) Pomodoro Sauce
- 1 1/2 Quart(s) Cannellini Beans
- 1 1/2 Quart(s) Chicken Stock
- 2 Cup(s) Pasta Water
- 1/4 Cup(s) Fresh Italian Parsley, finely chopped
- 6 Each Basil Leaves, chiffonade
- To Taste Salt & Pepper
- 1/4 Cup(s) Extra Virgin Olive Oil
- Pinch Red Pepper Flakes
- To Taste Parmesan Cheese, grated (for garnish)
Directions
- Add oil to a large pot over medium high heat
- Add onions, celery, carrots and red pepper flakes
- Season with salt and pepper
- Stir and cook down for 4 minutes
- Add chicken stock, Pomodoro sauce and pasta water
- Add cannelini beans, cook down for 15 minutes
- Half way through cooking, add parsley and basil then Season with salt and pepper
- Spoon some pasta into each bowl then ladle soup into bowls
- Garnish with parmesan cheese, parsley and basil
- Enjoy!
