Description

Pasta fagioli is a soup made using pomodoro sauce, cannellini beans and any type of small pasta you like.


Ingredients

  • 1  Pound(s) Ditalini Pasta, cooked al dente
  • 1
  • 6  Each Garlic Cloves, thinly sliced
  • 2
  • 1  Cup(s) Onions, diced
  • 3
  • 1  Cup(s) Carrots, diced
  • 4
  • 1  Cup(s) Celery, diced
  • 5
  • 2  Cup(s) Pomodoro Sauce
  • 6
  • 1 1/2  Quart(s) Cannellini Beans
  • 7
  • 1 1/2  Quart(s) Chicken Stock
  • 8
  • 2  Cup(s) Pasta Water
  • 9
  • 1/4  Cup(s) Fresh Italian Parsley, finely chopped

  • 6  Each Basil Leaves, chiffonade
  • 11
  •  To Taste Salt & Pepper

  • 1/4  Cup(s) Extra Virgin Olive Oil
  • 13
  •  Pinch Red Pepper Flakes
  • 14
  •  To Taste Parmesan Cheese, grated (for garnish)

Directions

    1. Add oil to a large pot over medium high heat
    2. Add onions, celery, carrots and red pepper flakes
    3. Season with salt and pepper
    4. Stir and cook down for 4 minutes
    5. Add chicken stock, Pomodoro sauce and pasta water
    6. Add cannelini beans, cook down for 15 minutes
    7. Half way through cooking, add parsley and basil then Season with salt and pepper
    8. Spoon some pasta into each bowl then ladle soup into bowls
    9. Garnish with parmesan cheese, parsley and basil
    10. Enjoy!
