Description

Pasta Fagioli is the perfect cold weather soup made with cannellini beans, pasta, tomatoes and chicken stock. Great served with toasted bread.


Ingredients

  • 3  Ounce(s) Weight Pancetta, Bacon or Prosciutto Scraps, diced
  • 1
  • 4  Each Garlic Cloves, crushed
  • 2
  • 2  Table Spoon(s) Olive Oil
  • 3
  • 2  Cup(s) Onions, diced
  • 4
  • 1 1/2  Cup(s) Celery, diced
  • 5
  • 4  Quart(s) Chicken Stock
  • 6
  • 1  Cup(s) Tomatoes, crushed
  • 7
  • 4  Cup(s) Cannellini Beans
  • 8
  • 2  Table Spoon(s) Basil, chiffonade
  • 9
  •  To Taste Salt & Pepper
  • 10
  •  To Taste Parmesan Cheese, grated
  • 11
  • 3  Cup(s) Small Pasta, cooked al dente

Directions

    1. Add oil to a large pot and heat
    2. Add meat to the oil and brown
    3. Add garlic and let lightly tan being careful not to burn
    4. Using a slotted spoon, remove meat and garlic
    5. Add onions and celery to pot and let caramelize, about 8 - 10 minutes
    6. Add basil, beans, tomatoes and chicken stock
    7. Stir and bring to a boil
    8. Once boiling, add pasta
    9. Let cook for 10 - 15 minutes
    10. Taste and season with salt and pepper if necessary
    11. Sprinkle with Parmesan cheese
    12. Serve and enjoy!
