Description
Pasta Fagioli is the perfect cold weather soup made with cannellini beans, pasta, tomatoes and chicken stock. Great served with toasted bread.

Ounce(s) Weight Pancetta, Bacon or Prosciutto Scraps, diced

Cup(s) Onions, diced

Cup(s) Small Pasta, cooked al dente

Directions
- Add oil to a large pot and heat
- Add meat to the oil and brown
- Add garlic and let lightly tan being careful not to burn
- Using a slotted spoon, remove meat and garlic
- Add onions and celery to pot and let caramelize, about 8 - 10 minutes
- Add basil, beans, tomatoes and chicken stock
- Stir and bring to a boil
- Once boiling, add pasta
- Let cook for 10 - 15 minutes
- Taste and season with salt and pepper if necessary
- Sprinkle with Parmesan cheese
- Serve and enjoy!
