Description

Penne Pasta with grilled shrimp, vegetables, crumbled feta cheese, basil, lemon and olive oil. A great summer pasta salad.


Ingredients

  • 1  Pound(s) Penne Pasta, cooked al dente
  • 1
  • 8  Each Shrimp, medium sized
  • 2
  • 2  Each Scallions
  • 3
  • 1  Each Jalapeno
  • 4
  • 1  Each Red Pepper
  • 5
  • 1  Each Ear of Corn
  • 6
  • 8  Each Cherry or Grape Tomatoes
  • 7
  • 3  Each Basil Leaves
  • 8
  • 1/8  Cup(s) Feta Cheese, crumbled
  • 9
  • 1/4  Cup(s) Olive Oil
  • 10
  • 1/3  Cup(s) Lemon Juice
  • 11
  •  To Taste Salt and Pepper

Directions

    1. Grill shrimp for about 3 - 4 minutes on Grill
    2. Grill vegetables until charred
    3. Remove skins and deseed the peppers
    4. After grilling remove kernels from the grilled corn
    5. Add olive oil so pasta does not stick together
    6. In a large bowl, add pasta and the vegetables
    7. Add olive oil, lemon juice, salt and pepper
    8. Next add the feta cheese, basil and toss
    9. Serve room temperature and enjoy!

one of my favorite dishes

I love this salad. I have made it lots of times. It is so nice, fresh and light. I have made it whole wheat pasta and it comes out great.
