Delicate and delicious cookie packed full of Pecans. Look and taste great. Keep the dough in the freezer pull them out and pop in the oven and have fresh Pecan Sandies in 15 minutes any time. You can make these with any nuts or dried fruit you like.


  • 1  Cup(s) Pecans, whole

  • 1 1/4  Cup(s) Flour, all purpose
  • 2
  • ¼  Tea Spoon(s) Baking Powder
  • 3
  • ¾  Tea Spoon(s) Salt
  • 4
  • 4  Ounce(s) Weight Butter
  • 5
  • 1/2  Cup(s) Sugar (powdered sugar)

  • 1  Each Egg, whole
  • 7
  • 1  Tea Spoon(s) Vanilla Extract

    1. Preheat oven to 325 degrees
    2. In a standing mixer with the paddle attachment, cream butter and sugar for 5 minutes on high speed
    3. Scrape sides of bowl down and decrease speed to low
    4. Add egg and vanilla extract, increase speed to medium
    5. Add flour, baking powder and salt
    6. When dough is a fine crumb texture, add pecans and mix on high to break up
    7. Smash dough together in the bowl then remove and place on a clean surface
    8. Roll dough until diameter is about the size of a silver dollar
    9. Cut dough in half then place on a baking sheet
    10. Place in freezer for 30 minutes
    11. Slice dough into 1/2" thick pieces
    12. Place cookies on a parchment paper lined baking sheet
    13. Bake for 10 - 12 minutes until golden brown
