Description

This is an easy and light dish that you can put together in minutes. Penne pasta with broccoli, sun-dried tomatoes, garlic and oil. Eat this as a main course or a side dish.


Ingredients

  • 1  Pound(s) Penne Pasta, cooked al dente
  • 1
  • 6  Cup(s) Broccoli Florets, blanched
  • 2
  • 1/2  Cup(s) Sun-Dried Tomatoes, sliced
  • 3
  • 1/2  Cup(s) Garlic Cloves, sliced
  • 4
  • 1/2  Cup(s) Extra Virgin Olive Oil
  • 5
  • 1 1/2  Cup(s) Chicken Stock
  • 6
  • 1 1/2  Cup(s) Reserved Pasta Water
  • 7
  • 1  To Taste Salt
  • 8
  • 1  To Taste Pepper
  • 9
  • 1/2  Cup(s) Pecorino Romano Cheese

  • ½  Tea Spoon(s) Red Pepper Flakes, crushed

Directions

    1. Heat a large saute pan on medium high and add extra virgin olive oil
    2. Once oil is hot, add garlic, cook until golden brown
    3. Add broccoli, chicken stock, pasta water, tomatoes, salt and pepper, cook for about 5 minutes
    4. Add pasta and toss, cook for another 2 minutes
    5. Add cheese and place in a bowl
    6. Top with pecorino cheese
