Description

This is a lightly sweet pumpkin bread with raisin and nuts that can be made into small rolls or baked in a loaf pan. Incredible with a little butter, warm out of the oven!


Ingredients

  • 10  Ounce(s) Weight All Purpose Flour
  • 1
  • 2  Each Eggs
  • 2
  • 1  Tea Spoon(s) Yeast
  • 3
  • 5  Ounce(s) Weight Pumpkin Puree
  • 4
  • 2  Ounce(s) Weight Sugar
  • 5
  • 1  Pinch Salt
  • 6
  • 1/2  Cup(s) Raisins
  • 7
  • 1/2  Cup(s) Walnuts, chopped
  • 8
  • 1  Tea Spoon(s) Cinnamon
  • 9
  • 1/2  Cup(s) Water
  • 10

Directions

    1. Preheat oven to 375 degrees
    2. Using a standing mixer with a paddle attachment, mix together flour and yeast
    3. Add sugar then pumpkin puree
    4. Add cinnamon
    5. Add eggs, one at a time
    6. Slowly add water, mix for 2 - 3 minutes
    7. Add raisins and walnuts, mix until incorporated
    8. Scrape down bowl and paddle
    9. Sprinkle some flour on dough and roll into a ball
    10. Cover dough with a paper towel and let rest for 1 hour, it will almost double in size
    11. Uncover and sprinkle with flour
    12. Roll dough into any portion size you prefer, you can split the dough into portions and place on a floured baking sheet or you can place the entire dough into a loaf pan
    13. Bake for 20 - 25 minutes until golden brown
    14. Enjoy!
